The nature of the different soils is widely varied, with flinty clays, mixed clay and limestone, and Sologne sand.
Grape variety and know-how
Côt and Cabernet Franc.
Harvested when perfectly ripe. Slow fermentation and ageing to extract the colour and preserve the freshness of the fruit.
Tasting notes
A supple, structured wine thanks to the Côt and Cabernet Franc varieties, with a sparkling, beautifully rich colour. A generous nose balanced with ripe fruit. Served with rillons, a local speciality of marinated pork belly confit, this wine really comes into its own.
To be served between 14°C and 16°C.
