When it comes to pairing cheese and wine, everything is possible as they both offer such a vast range.
Our favourite would be pairing a Sainte-Maure cheese with a Touraine wine, to really bring out the aromas of Sauvignon Blanc. A red Chinon beautifully balances out the aromas of a very mature pressed cheese, such as Salers, Comté or Beaufort.
To accompany a blue cheese, dare to try the subtle aromas of a Coteaux de l’Aubance, whose acidity and honeyed notes will be a perfect foil for the powerful taste of the blue cheese.
